Style Notes

Manhattan club with lemon foam

A refined classic that has been revisited in a new explosion of flavors and sensations where the smoky, rich and bitter notes of Lagavulin Scotch Whisky and of Vermut Carpano Antica Formula are softened by lemon.

The lower part of the cocktail is darker and more intense, inspired by our cotton pants with the intentionally overstated cuff. Everything is lightened by the lemon foam, which evokes the texture of the knit jacket. A bit of black salt from Hawaii makes for an interesting finishing touch that adds a delicate contrast and mimics the motifs of both the cardigan and pocket square.

COCKTAIL

45 ml Lagavulin 20 ml Carpano Antica Formula Vermouth 100 ml Guinness beer 2 drops of angostura bitter.

In a mixing glass, combine the angostura drops, Lagavulin, Carpano Antica Formula Vermouth and Guinness beer. Mix and pour into a high tumbler. Finish off with lemon foam and a sprinkling of black Hawaiian salt.

LEMON FOAM

250mL water 2 teaspoons soy lecithin filtered juice of one lemon a sprinkling of black Hawaiian salt.

In a square container, combine water, lemon juice and soy lecithin. Use an immersion blender just on the surface, creating as much foam as possible.

As a reinterpretation of the Irish Manhattan, this cocktail is best served in a Collins glass to further emphasize the unique sensorial experience.
